Autumn - Red Pepper & Carrot Soup
Autumn has arrived and what could be better than to prepare a bowl of homemade soup?
So why not try a bowl of Red Pepper & Carrot Soup.
3 Red peppers – Wash, de-seed and sliced. (a few odd seeds won´t hurt and add a kick to the soup!)
1kg Carrots (approx) – Peeled and sliced.
1 Potato – Peeled and quartered.
1 Onion – Peeled and sliced.
2 Knorr Stock Cube Vegetable – Make 500ml of stock with boiling water.
1. Place all of the sliced vegetables into a large pan and pour over the 500ml of vegetable stock, so that just covers the vegetables.
2. Bring to the boil and then let it simmer (without the pan lid) until the vegetables are soft.
3. Once the vegetables are soft, use a hand blender and blitz all of the ingredients until it reaches the consistency you like. If you like chunkier soup then it won´t need to be blended as much.
4. Serve alongside some crusty bread and enjoy
